Breakfast to Brunch: Mushroom, Onion, & Bell Pepper Stir Fry


This 3 ingredient stir-fry is as easy to whip up as it is delicious. It’s the perfect way to turn your usual egg-and-toast breakfast into a fancy-looking-&-tasting  brunch… & the yellow bell pepper adds a little sunshine to a dull morning.

All you need (for 2 servings) is:

§  Mushrooms (a handful should do)
§  An onion
§  A yellow bell pepper
§  Oil to fry (I used coconut oil – yumm)
§  Black pepper, mixed herbs and salt (a pinch of each)


Chop up the onion, mushrooms, and bell pepper. Heat up the oil in a frying pan, add the onions and mushrooms and fry till the mushrooms are slightly browned and the onions are soft. Add the bell pepper, black pepper and herbs. Fry for about a minute longer. Add salt to taste. Done.


Serve as a side to your egg and toast; or as I did; as part of my breakfast ‘burger’.  Be sure to toast and butter the bun first.

Or go grand and serve as part of a Valentine’s breakfast. In addition to the toast and egg, include: Bacon, baked beans, fresh fruit juice and a side of fresh fruit.


{Also consider switching the yellow bell pepper for a red bell pepper for a real Valentine’s theme}
