Weekend Breakfast: Perfect Pancakes



Weekend breakfasts are a 4girls thing… but I’m sure you already know that by now… We love our breakfasts!

Lazy weekend mornings and pancakes were made for each other! Enough said…

Presenting our simple and always delicious pancake recipe:

For 2 generous servings.. You will need:
1 cup flour
1 teaspoon baking powder
1-2 tablespoons sugar
1 egg
1 cup milk
1 teaspoon vanilla essence
A little oil for frying


  • Sieve flour and baking powder into a deep bowl. Add sugar and mix well.
  • In a separate smaller bowl beat the egg. Add the milk and vanilla. Mix well.
  • Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined. Don’t over mix.
  • Allow mixture to sit for a few minutes while you heat up a lightly-oiled frying pan over medium heat;  and prepare a plate to set your cooked pancakes.
  • Once the pan is hot - Use a tablespoon or small laddle to scoop pancake mixture onto the pan.
  • Once bubbles form on the surface of the pancakes flip them over – they should be golden brown on both sides.
 

  • Serve hot with honey or any syrup of your choice. Add sprinkles or sliced fruit for a little extra garnish.
  • Enjoy with someone you love or at least like..
P.S.
  1.  Once you’ve nailed the basic recipe - Feel free to experiment with extra flavor by adding cinnamon, or substituting half the milk for yoghurt, or adding raisins and chocolate chips, or even some mashed up banana. Have fun with it!
  2. The 1 cup measure I use is a standard form of measurement – that is 250ml.
   
        Instruction 8 is optional: These taste just as delicious if you eat them all alone..
